Hey, have you got leftover odds and ends of vegetables in your fridge? How about branching out and trying a new to you vegetable? This is how to make a super easy veggie side for your family, use up the leftover raw veggies or cook ahead veggies ready for your week:
Chop veggies (any veggie, go ahead be brave!) so they are in relatively the same size. Toss in a bowl and add olive oil to lightly coat the veggies. Lemon olive oil and garlic olive oil are yummy additions to try. Season with your favorite spices or just salt and pepper, just sprinkle on top. Heat grill and put veggies on some sort of mesh grate or platter and cook through. Using a mesh grate prevents your veggies from falling through your grill. I would tell you how long to cook them, except that everyone likes their veggies done to different crispness.
Taste. If they seem boring, add a favorite balsamic dressing, add balsamic vinegar or balsamic glaze. Add a dash of vinaigrette.
